Corn Soup With Vegetables

This fantastic soup is easy to prepare and not only it tastes delicious but it is also very healthy. Cooked sweet corn increases levels of ferulic acid, which provides anti-cancer properties.

vegan Bright Corn Soup

Ingredients:

  • 400 g of canned sweet corn
  • 1 onion
  • 1 celery
  • 1 carrot
  • 1 paprika
  • 1 teaspoon of starch
  • olive oil
  • salt, pepper, parsley

Preparation:

Chop onion and fry in hot oil. Add 100 ml of hot water, then chop carrot, celery and paprika into cubes and them too. Cook for about 15 minutes, then add the corn, parsley, salt and pepper. Pour in about a liter of hot water, and when it’s boiled, add starch diluted with a little water and stir everything well.
