Pumpkin Seed Veggie Burgers

Pumpkin seeds have a protein quality like chicken meat. So, they are a great alternative to meat, but also to soybeans, which many people avoid because of the genetic modification and phytoestrogens.

Burgers of Pumpkin Seeds

 

Ingredients:

  • 1 1/2 cup pumpkin seeds
  • 1 cup water
  • 1 large onion, chopped finely and fried in oil
  • 1/2 cup oats
  • pinch of salt
  • pepper
  • cumin
  • thyme
  • cayenne pepper
  • chopped garlic

Preparation:

Grind the seeds in blender into the powder. Pour half a cup of water and mix on highest speed to get a thick “sauce”. Then pour the other half cup of water and mix for some more. The result should be a thick mass that looks like yogurt. Pour the mass in a pan and cook for 5 minutes at the lowest temperature, stirring occasionally. Then add the fried onion, garlic and spices. Also, add oats (you know it is enough when the mass looks like minced meat). Now shape the mass into burgers and fry in the pan smeared with few drops of oil until they redden from both sides. Serve with salad or mustard or whatever you prefer.
