In these winter days warm soup is the favorite meal. Rich in vitamins, fiber and protein this tasty lentil soup with vegetables will certainly refresh you.
- 1-2 stalks of celery
- 3 carrots
- 1 large onion
- 3-4 garlic cloves
- 1 tablespoon of olive oil
- 3 sheets of bay leaf
- 7-8 cups of water
- 1 tablespoon spicy herbs (your choice)
- 1 1 /2 to 2 cups of green lentil
- 3 red potatoes ( optional)
- 1 bunch of spinach (optional )
- 1 teaspoon of salt
- 3 tablespoons of wine vinegar
How to make it:
Chop the celery, carrot, onion and garlic. Heat the oil in a large soup pot and add the vegetables and bay leaf. Cook on medium heat until the vegetables are soft, then add water, pices and lentils. Cook on medium/high heat for about 45 minutes, adding more water if necessary. Cut the potatoes into cubes (if you are using it). Put them into the soup and cook until they are soften (10-12 minutes) .Remove from heat. Add wine vinegar. Keep the pot covered until serving.
Serve with toasted bread cubes and chopped fresh parsley.
For 8 serving.
