Sicilian Orange Salad

Not only oranges are rich in vitamin C that helps against tiredness, cold and flu, but it is also proven to lower total cholesterol and LDL cholesterol. It is known as powerful antioxidant and it is effective in the prevention of some cancers.

Ingredients:

  • 4 oranges (mix Valencia and Blood Oranges for beautiful contrasting colors.)
  • 1 onion (thinly sliced)
  • 1 tablespoon of chopped mint
  • extra virgin olive oil
  • salt and pepper

Preparation:

Peel oranges and chop them into rings. In a bowl pour a drizzle of olive oil, add salt and pepper,  then add add chopped mint and onion slices. Mix all well and leave it on the side for some time. In a plate arrange the rings of the oranges by covering the bottom with them and then pour the mixture of olive oil, parsley and onion over the oranges. Spice with pepper and the Sicilian salad is ready.
