Tomato Broth With Cashew Nuts

Light tomato broth with cashew nuts, owing to cashew nuts, becomes an exquisite creamy delight… Forget about unhealthy whipped cream! As far as tomatoes are concerned: use fresh ones or strained tomato, but with no sugar added or with food additive (high-quality Italian passata).

Ingredients for 4 servings:

  • 750 ml of strained tomato (no sugar added) or 700g of fresh, peeled and free seeds tomato
  • 1 chopped onion
  • 4 cloves of garlic
  • 200 g of pumpkin cut into cubes
  • 150 g of cashew nuts
  • unrefined sea salt, pepper

Preparation:

Put tomatoes in a pot. Pour 1 cup of water over them. Add onion, garlic and pumpkin. Let it boil and then simmer for about 20 minutes. When the broth cools down a little bit, put it in a blender, together with cashew nuts and mix. Spice it up (to taste).
