Because these are raw food recipes for beginners ,we will be very minimalist but you can surely add some of your favorite flavors to almost all these recipes.
Mango Red Pepper Salsa
When you think about salsa ,you think about something happy with lots of colors and passion. Here is one simple raw Mango red pepper salsa recipe that will make your day better.
- 1 ripe mango, peeled and diced
- 1/2 red pepper, diced
- 1/2 red onion, peeled and chopped
- 1 tomato, chopped and seeded
- 3 tablespoons fresh cilantro leaves, chopped
- 2 tablespoons fresh lime juice
- Dash of cayenne pepper
- Salt and pepper to taste
Combine all the ingredients in a bowl. Cover and allow to sit in the fridge for at least one hour. Serve with chips or whatever you like.
Raw Vegan Summer Salad with Fresh Corn and Tomatoes
This, I like to categorize as an ”easy meal” . It is very easy to prepare this salad and it’s yummy. If you like spicy food you can add some chili peppers.
- corn kernels from 2 ears of corn, or 2 cups frozen kernels (defrosted)
- 1 red bell pepper, chopped
- 1 large tomato, seeded and chopped
- 4 green onions, chopped
- 1/2 avocado, diced
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh cilantro
- 1 Tbsp lime juice
Combine all raw ingredients, and gently toss with lime juice, oil and a dash of sea salt, combining well and gently.
Best served after the ingredients have chilled together for at least one hour, to allow the flavors to mingle. Gently toss again, just before serving.
Salad in Avocado Shell
It is an amazing looking salad, offering 60 percent of your recommended fiber for the day. This antioxidant-rich rainbow salad aids in digestion and may even diminish belly fat. Chopped tomatoes, peppers, and radishes are tossed in a spicy lime dressing then neatly tucks into a halved avocado for an amazing presentation.
- 1 Tbsp lime juice
- 1 tsp garlic, minced
- 1 pinch cayenne pepper
- 1/4 cup yellow bell pepper, diced
- 1/4 cup baby tomatoes, sliced
- 3 radishes, finely diced
- 1 avocado, halved and seeded
- 1 Tbsp vegan feta cheese (or other vegan cheese)
- 1 tablespoon cilantro, chopped
- 1 tablespoon scallion, chopped
Combine lime juice, cayenne, and garlic in a small bowl. Add yellow bell pepper, tomatoes, and radishes to the bowl, and mix well. Set up your halved avocado on a plate. Spoon your pepper and tomato salad mixture into the center of the avocado. Garnish with crumbled veggie cheese, scallions, and cilantro.
Raw Vegan Cheese
This s really special recipe. You will need to wait around 2 weeks to eat it but trust me, it’s worth it. I mean, imagine how your friends will react when you serve them raw vegan cheese made from all these delicious ingredients.
- 1 cup nuts (I prefer chasews and pine nuts, but any nuts will work.)
- 1 cloves garlic, minced
- salt and pepper, to taste
- 2 Tbsp sunflower oil
- 1 Tbsp lemon juice
- 1/2 cup water, as needed
- 1 tsp basil, dried
- 1/2 tsp oregano, dried
Blend all ingredients in a food processor until smooth and consistent. Roll the mixture into a ball and wrap in a cheese cloth. Set the ball in a colander to allow any liquid to drain. Let sit at room temperature for 24 hours, then store in refrigerator. Cheese can be warmed in an oven before serving, if desired. Serve with crackers, bread, or fruit.
Coconut Curry Soup
This delicious soup is very easy to made and it can be server warm or chilled . Anyway it is sure that it will warm you up and you will surely enjoy the many different ingredients.
- 1 young Thai coconut – both cocont water and flesh
- 1 large carrot, peeled
- 1 small clove garlic
- 1 tsp fresh ginger
- 2 tsp curry powder
- 1/2 Thai chili pepper, minced (adjust more or less to manage spice level)
- 1 red bell pepper, diced
- Fresh basil, for garnish
- 1/3 cup water
Blend all ingredients (except basil) in a blender until creamy and smooth. If you prefer warm soup, blend for 3-5 minutes. Otherwise, serve at room temperature. Garnish with basil leaves.
