Breakfast is most important meal of a day. Maybe because you need to prepare it right in the morning after you get up. Because of that you can get in morning breakfast  routine or maybe you just have a lack of ideas. 1. Vegan Mini Quiche

This fantastic colorful meal tastes as wonderful as it looks. It takes some time to prepare but it is worth every second.

Ingredients for the filling:

  • 6 spinach leaves
  • 12 cherry tomatoes
  • 6 basil leaves
  • 1 red onion
  • 1 tablespoon coriander
  • 3 cloves of garlic
  • pepper

Ingredients for the base:

  • ½ cups cashew nut, soaked 2 – 4 hours
  • ½ pure water
  • 1 teaspoon active live nutritional yeast
  • 1 teaspoon light organic raw miso
  • 1 teaspoon flaxseed oil

Preparation:

Prepare the base blending all ingredients for the base together in a blender until very smooth.

For the filling: chop spinach into strips, onion into rings, chop coriander roughly and cut tomatoes in half. Torn basil leaves by hand and slice thinly garlic. Add pepper and the filling is done.

Assemble:

Use two tart cases and stack the vegetables, starting first with spinach, then cherry tomatoes, basil leaves, coriander, garlic, and red onion rings. When you finish the stacking, a bit of the blended base mixture on top of the vegetables. Now stack another layer of the vegetables and pour again the mixture (and repeat this until the the case is completely filled). At the and put some thyme leaves on the top and place in the dehydrator at 115 degrees. Dehydrate for more than 24 hours or until the desired consistency is obtained. When you take the meal out, sprinkle with some more thyme.

3.  Quinoa With Coconut Milk

A morning beginning with such a breakfast predicts a wonderful day.

Ingredients:

  • ½ cup of dry quinoa, rinsed
  • ¾ cup of canned coconut milk (and you’ll need some more for drizzling)
  • 2 teaspoons of vanilla extract
  • ½ teaspoon of cinnamon
  • pinch of salt
  • 1 banana
  • ⅓ cup toasted pecans

Preparation:

Mix quinoa, vanilla, coconut milk and cinnamon in a saucepan and cook. Cover the saucepan, reduce temperature and let cook for about 15 minutes until quinoa is fluffy. Since this quantity of ingredients is for two servings, divide quinoa into two bowls and then cover with bananas, pecans, and a few extra drizzles of coconut milk.

4. Raspberry Whole Wheat Cinnamon Rolls

A sweet meal and a cup of coffee are a good combination for the brain, especially in the morning. Many people consider the sweat breakfast strange, but in Italia for example, the breakfast is always sweet – cake or cookie with espresso or cappuccino, of course.  So, take your time to prepare a “colazione dolce” and enjoy!

5.  Lentils and Zucchini Toast Sandwich

Lentils and Zucchini Toast Sandwich

Ingredients :

  •  100 g green lentils
  •  500 g zucchini
  •  2 cloves of garlic
  •  100 ml olive oil
  •  1 lemon
  •  1 bunch of chives
  •  1 teaspoons unrefined sea  salt
  •  pepper

Soak ashed and cleaned lentils for 2 hours in cold water, then cook the lentils  in the same water and add a little of salt. After the lentils are cooked drain it and leave it. Now took the zucchini and chop into rings and stew shortly in 2 teaspoons of olive oil. At the end of stewing add squashed garlic, stir it for minute and leave it to cool a little.  Now put lentils and cooked zucchini in a bowl or in blender and mix it. Add olive oil and lemon juice while you mix and pepper at the end. Leave spread to cool down and you can pat it on fried bread (or tortillas or anything you like).
