8 Super Easy Vegan Recipes for Kids

Probably the most difficult task of all mothers is to make their children to eat. However, if you make a yummy dish and serve it nicely maybe you’ll win the heart of your kids. We offer 8 super easy and delicious vegan recipes for kids and we hope that they will enjoy it, as well as the whole family. To make it super fun include your children in preparation of the food and give them some easy tasks.

  1. Veggie burger made with couscous easy vegan couscous burgers

Ingredients:

  • ½ cup couscous
  • 2 cups pre-cooked mashed potatoes (look in deli section) 
  • 1 grated zucchini
  • 2 shredded carrots
  • 1/3 cup cooked corn kernels
  • 1/2 cups frozen spinach- thawed, drained and finely diced
  • 1 large onion, peeled and chopped
  • 5 cloves garlic, minced
  • 1/4 tsp cumin powder
  • 1 tsp thyme
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • Olive oil

Preparation:

Cook couscous as instructed on the package. Set aside to cool. Then mix all the ingredients – except olive oil – until you get the a dough that can be formed into balls. Form dough into 10 ball s, and press each ball flat with your hands to get a thick burger. Heat the olive oil in a large pan and fry the burgers, about 5 minutes on each side. You can also bake them in the oven, which takes a little longer, about 15 minutes on each side.

  1. Pasta with leek

Ingredients:

  • 300 gr pasta
  • 200 gr leeks, chopped
  • 1/2 onion, chopped
  • Salt
  • Pepper
  • 500 ml vegetable stock

Preparation:

Cook the pasta according to the instructions on the package, drain and leave to stand aside. Heat the oil in a pan. Add chopped onion and sauté for about 2 minutes. Add leeks, salt, pepper and stock. Cover and simmer for about 10 minutes. At the end add pasta, stir well and serve.

  1. Vegan Russian salad

Ingredients:

  • 8 medium sized potatoes
  • 8 large carrots
  • Celery root
  • 2 parsnip
  • 1 Large cup of cooked peas
  • 20-25 pickles
  • Mustard, salt and pepper to taste
  • Vegan mayonnaise

Preparation:

Cook the peas and the rest of the vegetables in a salted water, add a pinch of salt. Allow to cool. Cut all the ingredients into small cubes and add the peas. If you wish you can add canned peas instead of cooked.  Add mustard, mayonnaise, salt and pepper to taste. Mix all the ingredients slightly.

  1. Fried dumplings made of chickpea

Ingredients:

  • 1 cup canned chickpeas
  • 1/2 chopped onion
  • 5 chopped clove of garlic
  • 1/4 cup fresh parsley
  • Salt and pepper
  • 2 tablespoons soft flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 tablespoons olive oil

Preparation:

Add chickpeas, onion, garlic and parsley in a blender and blend it well. Pour the mixture in a bowl, add the remaining ingredients and stir well. Shape the dumplings with your hands. Heat the oil in a pan and fry the dumplings for 2 to 3 minutes on each side.

  1. Baba ghanoush baba-ganoush

Ingredients:

  • 1 medium eggplant
  • 2 minced garlic cloves
  • 1/2 cup lemon juice
  • 1/2 cup finely chopped parsley
  • 6 tablespoons tahini
  • 1/4 tsp cayenne pepper

Preparation:

Bake eggplant with the skin. Allow it to cool and then take out the eggplant meat with a spoon. Add the eggplant meat in a blender together with garlic, lemon juice, parsley and tahini. Ad the cayenne pepper and any other spices you wish. Allow it to cool in the fridge for 1 hour, then serve.

  1. Eggplant bruschetta

Ingredients:

  • 1 medium eggplant
  • 2 cups chopped tomatoes
  • 1 tablespoon chopped basil
  • 1/2 tablespoon chopped oregano
  • 2 cloves of chopped garlic
  • 1 tablespoon olive oil
  • Salt and pepper

Preparation:

Wash well the eggplant and cut it into thick slices. Combine all the ingredients except the eggplant in a small bowl, and stir well. Heat oil in a large pan, and fry eggplant for 3-4 minutes on each side. Remove from heat and evenly arrange tomato mixture on each slice of eggplant.

  1. Chocolate truffles

Ingredients:

  • 1 cup raw cashews (alternative: almonds, pistachios, hazelnuts, walnuts)
  • 1/4 cup cocoa (alternative: coconut flour or ground nuts)
  • 1 cup of pitted dry dates (alternative: any other dry fruit)
  • 1/8 cup water (alternative: coconut milk or fruit juice)

Preparation:

Grind cashews in a blender, transfer it to a larger bowl and mix with cocoa. Grind the dates with water in a blender, to get a smooth paste. Combine the mixture of dates with cashew and cocoa, mix it well with hands. Divide the mixture in 12-16 pieces and shape the truffles with your hands. Roll each truffle in cocoa. Put truffles in the fridge to cool for an hour.

  1. Tortillas with fruit and nuts

Ingredients:

  • 1 cup chopped melon, such as honeydew or caenteloupe
  • 1 cup chopped peaches
  • 1/3 cup raisins
  • 1 lemon, juice and zest
  • 2 tablespoons agave syrup
  • 1 tablespoon almonds, slivered
  • 1 tablespoon peanut butter
  • 4 corn tortillas

Preparation:

Combine all the ingredients – except tortillas – in a bowl. Mix well, and set aside. Heat the tortillas in a large dry pan, over medium heat. Fill each tortilla with the ingredients, wrap and serve.
