Basic Scrambled Tofu

Here is a very nice recipe of scrambled tofu with nice big tofu pieces in it. The flavor is lip-smacking and a bit salty and the spice mixture will bring its fresh flavor to the meal.

Ingredients for spice blend:

  • 2 teaspoons ground cumin
  • 1 teaspoon dried thyme, crushed
  • ½ teaspoon ground turmeric
  • 1 teaspoon salt
  • 3 tablespoons water

Ingredients for tofu:

  • 3 garlic cloves, minced (or more, to taste)
  • 2 tablespoons olive oil
  • 1 pound extra-firm tofu, drained
  • ¼ cup nutritional yeast
  • fresh black pepper, to taste

Hot sauce, for serving

Preparation:
In a small cup blend cumin, thyme, turmeric and salt. Add water, mix well and then set aside. Preheat a large pan over medium-high heat, pour olive oil in and add garlic. Break tofu apart into small pieces and sauté for10 minutes. Stir very often in order not  to let tofu stick to the pan. The tofu is done when it gets brown on at least one side. The water should cook out of it but if there is too much water in the pan just turn the heat up and it will evaporate. Finally, stir in the spice blend you prepared previously. Add the nutritional yeast and pepper and cook for 5 minutes more. Serve while it is still warm, with hot sauce to taste.
