Winter comes and brings us the joy of warm comfort foods. On a chilly day you just want to sit back and relax in your cozy home and enjoy a warm delicious meal. A heavenly scrumptious soup tricking down our throats brings us unimaginable satisfaction. An even better approach is to prepare the soup with healthy ingredients, hence killing two birds with one stone.
There are many different types of soup recipes out there, but if you are in a mood for filling your house with mouthwatering aroma and a vibrant eye catching end result and then you should definitely try this recipe of black bean, sweet potato and quinoa soup. We promise you that it will be the best you have ever had.
This recipe is for 4 to 6 people. You can always double or triple it according to your requirement.
- Clean uncooked red quinoa 1 cup
- diced sweet onion 2 cup
- Peeled and diced large sweet potato 1
- Coconut oil 1/2 tablespoon
5) ground cumin 1.5 tsp
6) vegetable broth 6 cups
7) cayenne pepper 1/4 tsp
8) salt and black pepper 1/2 tsp
9) chilli powder 1 tsp
10) minced garlic cloves 3
11) ground coriander 1/2 tsp
12) diced jalapeno 1 cup
13) diced sweet onion 2
- lime juice
- salsa green
- corn chips
- cashew cream
Pour water in a medium sized pot and add quinoa.
Once the water is boiled, cover the pot with a tight lid and lower the flame.
Let it cook till the quinoa becomes fluffy and all the water is absorbed.
Then turn off the flame, take a fork and fluff the quinoa.
The time when the quinoa was boiling can be utilized to heat oil in a pot,onion and garlic on medium heat till it turns light brown.
Add the seasonings; which are salt and pepper, sweet potato and jalapeno in the same bowl for 6-8 minutes.
Now its time to pour in the broth with chili powder, coriander and cumin, reduce the heat when the mixture comes to a boil and let it simmer till the potatoes turn soft. This takes about 20 minutes.
When its time for serving, add black beans, cayenne and cooked quinoa beforehand.
Taste your soup and season again according to your need and garnish your soup with the topping.
