Spanish Marinated Mushrooms

Marinated mushrooms are usually served as the side dish, but since they are so tasty and nutritious, they can sometimes be the main dish, why not!

vegan marinated mushrooms


  • 1/4 cup olive oil
  • 3 tablespoons lemon juice (or a vinegar)
  • 8 oz mushrooms, washed and dried
  • ½ tsp cayenne pepper
  • 1 tsp thyme
  • ½ tsp oregano
  • 1 tsp coriander seeds
  • 3 cloves of garlic, chopped
  • salt and pepper, to taste


Heat olive oil in a large pan. Add the mushrooms, lemon juice, spices, cayenne pepper, thyme, oregano, coriander, and garlic. Simmer for 10 minutes until mushrooms soften. Remove from heat, cover and refrigerate for 2 hours. Serve cold or re-warmed as a side dish.
