Pumpkin Seed Meatballs

Pumpkin seeds have the same amino acid composition as chicken and they are a great source of complete protein in vegan diet. Since they also contain fat, they are used as substitute to minced meat.

  • ½ cup raw pumpkin seeds
  • salt, pepper, thyme, cayenne pepper
  • 2-3 cloves of garlic, chopped
  • 1 large onion
  • 1 teaspoon of olive oil
  • oatmeal


Place pumpkin seeds in the blender and blend until you get a nice powder. Add half a cup of water and mix at highest speed until you get thick “sauce”. Then add other half cup of water and mix until the mixture looks like yogurt. Pour the mixture in a small pot and cook for 5 minutes at lowest temperature, stirring frequently. The prepared mixture is really great; it can also be used as a kind of crumbled pumpkin “tofu”. For example, you can cook it with leek and spring onion and you’ll get a nice “omelet”. Anyway, that’s not what we do in this recipe, so we’ll continue with the preparation of meatballs.

Pour a teaspoon of olive oil in a pan and cook onion. Stir the cooked onion in the previously prepared pumpkin mixture. Add also spices and onion. then add oatmeal, little by little, until the mixture has the texture like minced meat.

Moisten your hands with water and shape the mixture into meatballs and place the meatballs in the baking dish. Bake until they get nice brown color.

These meatballs can be served with mustard or salad, or grains, or you can prepare a light Mediterranean tomato sauce and serve with spaghetti or boiled potatoes.
