Since mayonnaise is one of the items we almost always have in our houses (usually purchased one), here is a simple way to make yourself vegan mayonnaise that is healthy and tasty:
- 2 tablespoons of finely ground rice flour
- 100 ml water
- 4-5 tablespoons of olive oil
- 1 teaspoon of mustard
- 1 ½ tablespoons of lemon juice
- pinch of unrefined sea salt
- 3 teaspoons of corn thickeners
- a bit of turmeric
Pour water in a small pot and add rice flour. Cook at medium temperature until you get the creamy mass. Remove the pot from burner and add turmeric, salt, lemon juice and mustard. Mix well and add corn thickeners. Put the pot back on the burner and cook at medium temperature for few minutes. After it’s done, add pepper and mix well.
There are also ways to make vegan mayonnaise with almonds or soy milk or tofu, but I prepare most often this one because I find it a very simple vegan mayonnaise recipe.
