Light tomato broth with cashew nuts, owing to cashew nuts, becomes an exquisite creamy delight… Forget about unhealthy whipped cream! As far as tomatoes are concerned: use fresh ones or strained tomato, but with no sugar added or with food additive (high-quality Italian passata).
Ingredients for 4 servings:
- 750 ml of strained tomato (no sugar added) or 700g of fresh, peeled and free seeds tomato
- 1 chopped onion
- 4 cloves of garlic
- 200 g of pumpkin cut into cubes
- 150 g of cashew nuts
- unrefined sea salt, pepper
Put tomatoes in a pot. Pour 1 cup of water over them. Add onion, garlic and pumpkin. Let it boil and then simmer for about 20 minutes. When the broth cools down a little bit, put it in a blender, together with cashew nuts and mix. Spice it up (to taste).
