Tortillas With Vegetables

Mexican meals taste great but lot of them contain dairy products and vegans don’t eat them. Here is one of the Mexican meals ideal for us vegans 🙂 !

vegan Tortillas With Vegetables

Ingredients:

  • 4 tortillas
  • 1 onion
  • 3 cloves of garlic
  • 2 zucchini
  • 2 fresh peppers
  • 4 cherry tomatoes
  • 280 g of cooked corn
  • 2 tablespoons olive oil
  • 100 ml of soy yogurt or sour cream
  • ½ teaspoon of ground chilli
  • 1 tablespoon chopped parsley
  • salt and pepper

Preparation:

In a larger bowl pour soy yogurt (or sour cream), chopped garlic, few drops of olive oil, ground chilli, a pinch of salt and mix all well. In a frying pan fry chopped onion in olive oil until it gets soft and then add zucchini and peppers chopped into cubes, cherry tomatoes chopped into quarters and cooked corn. Add a pinch of salt and pepper and fry for 2-3 minutes.

Warm tortillas in a pot or in microwave oven and spread one side of each tortilla with soy sauce you prepared, sprinkling with chopped fresh parsley. Then add fried vegetables and, in the end, shape tortillas into desired form. Stab tortillas with toothpicks so they keep the form.
