- 1,5 cups of cornmeal flour
- 1,5 cups of whole grain wheat flour
- 1 tablespoon of finely ground flax seeds
- ½ teaspoon of sea salt
- 2 teaspoons of baking powder
- 3 cups of apple juice
- 2 tbsp agave nectar
- 2 cups fresh blueberries
Mix cornmeal flour with whole grain wheat flour. Add ground flax, salt and baking powder. Add apple juice and agave syrup to the bowl and mix well. Leave it for about 10 minutes. Gently fold in the blueberries, careful not to mush them too much. Pour into molds for muffins, greased with olive or sesame oil. Bake at 350 degrees for about 35 min, watching carefully to avoid burning the tops.
